White Chili
1/4 cup margarine or butter
1 large onion
1 clove garlic, finely chopped
4 cups cooked chicken or turkey, 1/2 inch cubes
3 cups chicken broth
2 Tbs chopped fresh cilantro
1 Tbs dried basil leaves
2 tsp chili powder
1/4 tsp ground cloves
1 lb great northern beans (cooked according to package)
Melt the margarine in a Dutch oven over medium heat. Cook onion and garlic in margarine, stirring occasionally, until onion is tender.
Stir in remaining ingredients. Heat to boiling; reduce heat to low. Cover and simmer 1 hour, stirring occasionally.
Makes 6 servings, about 1 1/2 cups each
