One-Pan Chili

2 Tbls. olive oil
1/2 onion, diced
1 stalk celery, diced
1 bay leaf
1 tsp. cayenne or red pepper flakes
2 tsp. dried oregano
1/2 c. tomato juice
1 c. ground beef
1 can black beans, drained
grated colby jack cheese
chopped cilantro
minced jalapeno
Directions:
Saute the onion, celery, and beef in a frying pan. When beef is done, drain off excess fat, reduce the heat a bit and add cayenne, bay leaf, and oregano. Cook about 3 minutes longer. Add the tomato juice, beans. Cook until heated completely through, or until slightly thickened.
