Lentil Chili
|
1/2 cup dried brown lentils
1 tablespoon olive oil
1 large vidalia onion
1 large red bell pepper
6 cloves crushed garlic
6 tablespoon chili powder
3 teaspoon paprika
pinch of salt
1 teaspoon dark brown sugar
2 15 oz cans dark red kidney beans
1 15 oz can chopped tomatoes
2 fresh jalapeno peppers
curry powder to taste
Prepare lentils as normal. Chop the veggies and saute with olive oil for 7 minutes. Add garlic and saute for 2 more minutes. Place everything in a large pot and simmer for 45-60 minutes. Then enjoy.
